"ARROZ CALDO WITH CHICKEN"

Arroz Caldo with Chicken

          Arroz Caldo with chicken is one of the most popular not only for breakfast but also for "miryenda"(afternoon meals) of Pinoys, especially in rainy days. It came from the Spanish words, "Arroz" means rice and "caldo" means hot. It is often served at the street side eateries commonly known as turo-turo restaurants.

Ingredients:



1½   cups rice
1   small chicken
1   inch cube ginger
2   segments garlic chopped fine
1   small onion chopped
2  tbsps. patis or soy sauce
2   tbsps. lard
6   cups of water (or chicken stock)
2   stalk green onion


Procedure:

1.   Dress and cut chicken into convenient sizes, wash and clean well.
2.   Pare and slice the ginger thin.
3.   saute the garlic, ginger and onion.
4.   add the chicken and flavor with 2 tbsps. full patis or soy sauce.
5.   Cover the pan, allow to simmer for a few minutes.
6.   add the rice and water (or chicken stock), stirring all ingredients together to avoid sticking on the sides of the pan.
7.   Cook over low heat for 20 minutes or until the chicken and the rice are cooked, and the chopped green onions before serving.
