"SAPIN-SAPIN"

Sapin-Sapin

             Sapin-sapin is a layered glutinous rice and coconut dessert in Philippines cuisine. It is made from rice flour, coconut milk, sugar, water, and coloring with coconut flakes sprinkled on top. Sapin-sapin means "layers" and the dessert is recognizable for its layers, each colored separately. It has been referred to as "a blancmange of several colored layers, sweetened and flavored with coconut milk".

Ingredients:

¼ kilo malagkit rice

¼ kilo ordinary rice – soaked in water and ground galapong

1 cup ube (boiled and mashed)

2 ½ cup refine sugar

5 cup coconut milk

Procedure:

Combine galapong, coconut milk and sugar. Divide mixture into 3 parts. Mix one part with ube for the middle layer. Use the other parts for top and for the middle layer. Add red food coloring to make this light pink. Boil water in carajay and place a bamboo steamer with thick muslin and pour on 3/1 cup of the pink mixture for the bottom layer. Cover the carajay and steam mixture until firm. Pour over the first layer the ube mixture and steam again. When firm, remove from the steamer. Allow to cool. Slice into ½ inch wedges. Arrange on a platter line with banana leaves.
